Description
A rich and gooey chocolate cake layered with soft marshmallows, a decadent chocolate frosting, and topped with crunchy pecans. A classic Southern dessert.

1 box (15.25 oz) devils food cake mix
3 large eggs
1 cup water
1/2 cup vegetable oil
5 cups mini marshmallows
4 tablespoons salted butter
1/2 cup milk
3 tablespoons cocoa powder
3 cups powdered sugar
2 teaspoons vanilla extract
1 cup chopped pecans
Instructions
- Step 1: Preheat the oven to 350℉ and spray a 9×13-inch pan with nonstick cooking spray.
- Step 2: In a large mixing bowl, beat the devils food cake mix, eggs, water, and vegetable oil with an electric mixer on medium-high speed for 1-2 minutes until thoroughly combined.
- Step 3: Pour the cake batter into the prepared pan and use a spatula to smooth out the top.
- Step 4: Bake for 26-32 minutes, or until a toothpick inserted into the center comes out clean.
- Step 5: Remove the cake from the oven and immediately spread the mini marshmallows evenly over the hot cake.
- Step 6: Place the cake back into the oven for 3-4 minutes until the marshmallows are softened and puffy.
- Step 7: While the marshmallows melt, add the butter, milk, and cocoa powder to a medium saucepan over medium-high heat and bring the mixture to a boil.
- Step 8: Once boiling, reduce the heat to low and let it cook for 2 minutes, stirring continuously.
- Step 9: Remove the saucepan from the heat, then whisk in the powdered sugar and vanilla extract until the frosting is smooth.
- Step 10: Pour the warm chocolate frosting over the marshmallow layer.
- Step 11: Sprinkle the chopped pecans evenly over the top of the cake.
- Step 12: Refrigerate the cake for at least 30 minutes to allow the frosting to set before slicing and serving.
Notes
Chilling the cake helps the marshmallows and chocolate set, making it easier to slice. The marshmallows will still remain soft.
For a softer, meltier, and gooier cake, you can serve it immediately after frosting or let it set at room temperature instead of refrigerating.
