Description
Warm, fluffy biscuits topped with a homemade apple pie filling and finished with a sweet maple glaze. A perfect treat for breakfast or dessert.
Ingredients
For the Apple Sauce:
3 cups apples (peeled & cubed)
2 tbsp sugar
1 tsp cinnamon
8 ounces apple juice
1 tbsp cornstarch + 3 tbsp water
For the Biscuits:
2 ¼ cups 1:1 gluten-free flour or all-purpose flour
8 tbsp butter (cold)
1 ¼ tsp kosher salt
1/3 cup sugar
1 tsp cinnamon
½ tsp baking soda
1 tbsp baking powder
1 cup buttermilk
For the Glaze:
2 tsp milk (add 1 more tsp if needed)
3 tbsp maple syrup
1 ½ cups powdered sugar
Instructions
- Step 1: To make the apple sauce, add the apples, 2 tbsp sugar, 1 tsp cinnamon, and apple juice to a large stockpot.
- Step 2: Cook the mixture over low to medium heat for 15 minutes until the apples become tender.
- Step 3: Mix the cornstarch and water to create a slurry. Stir this into the apple mixture and continue to cook until it thickens to the consistency of apple pie filling. Set aside.
- Step 4: For the biscuits, preheat the oven to 450°F. Brush a 9-inch cast iron skillet or a 7×10 baking dish with 1 tbsp of butter.
- Step 5: In a large bowl, mix together the flour, salt, 1/3 cup sugar, 1 tsp cinnamon, baking soda, and baking powder.
- Step 6: Cut in the cold butter using a pastry blender or your fingers until the mixture resembles pea-sized crumbs.
- Step 7: Stir in the buttermilk, mixing only until the dough is just combined. Avoid overmixing.
- Step 8: Place the dough in the freezer for 20 minutes to chill.
- Step 9: Use a large ice cream scoop to portion the dough into 6 large biscuits and arrange them in the prepared baking dish.
- Step 10: Top the biscuits with the prepared apple pie sauce and bake for 20 minutes.
- Step 11: To make the glaze, mix the milk, maple syrup, and powdered sugar in a bowl until smooth.
- Step 12: Drizzle the glaze over the warm, baked biscuits before serving.
Notes
This recipe works with either all-purpose flour or a 1:1 gluten-free flour blend.
For tender biscuits, be careful not to overmix the dough after adding the buttermilk.
If the glaze is too thick, add another teaspoon of milk to reach a smooth, drizzling consistency.
