Description
Individual apple pie bundles featuring a warm, spiced apple filling wrapped in a flaky, homemade pastry crust. A perfect single-serving dessert.
Ingredients
2 tablespoons unsalted butter, melted
cinnamon-sugar, for topping
2 medium tart apples
2 tablespoons unsalted butter
1/4 cup granulated sugar
1 and 1/2 teaspoons ground cinnamon
2 and 1/2 cups all-purpose flour
2 teaspoons granulated sugar
1 teaspoon salt
1 cup cold unsalted butter, cut into 1/2-inch cubes
4 to 6 tablespoons cold water
Instructions
- Step 1: To make the dough, whisk together the flour, 2 teaspoons of granulated sugar, and salt in a large bowl. Cut in the cold butter using a pastry blender or fork until the mixture resembles coarse meal with pea-sized butter pieces.
- Step 2: Gradually add 4 to 6 tablespoons of cold water, one tablespoon at a time, mixing until the dough just holds together when you pinch it.
- Step 3: Shape the dough into a disc, wrap it tightly in plastic wrap, and refrigerate for at least 2 hours.
- Step 4: When ready to bake, preheat your oven to 400°F and line two baking sheets with parchment paper.
- Step 5: To make the filling, cut the apples into small 1/2-inch pieces. In a large pan over medium heat, cook the chopped apples and 2 tablespoons of butter for 3-4 minutes, stirring frequently.
- Step 6: Add 1/4 cup of granulated sugar and the ground cinnamon to the pan. Continue cooking for another 3-4 minutes, then remove from heat.
- Step 7: On a well-floured surface, roll the chilled dough out to a 1/4-inch thickness. Cut the dough into 4-inch squares, re-rolling any scraps as needed.
- Step 8: Place the dough squares on the prepared baking sheets. Spoon 1 to 1 and 1/2 teaspoons of the apple mixture into the center of each square. Fold the corners toward the center, overlapping them slightly and pinching them together to seal.
- Step 9: Brush the top of each bundle with melted butter and sprinkle with 1/8 to 1/4 teaspoon of cinnamon-sugar.
- Step 10: Bake one pan at a time for 14-16 minutes, or until the crust is golden brown. Allow the bundles to cool slightly on the pans before transferring to a wire rack.
Notes
Recommended tart apple varieties include Pink Lady, Granny Smith, or Fuji.
The apples can be peeled or left unpeeled based on your preference.
You may not need all of the water for the dough; add it slowly until the right consistency is reached.
