Description
Soft and chewy brown sugar cookies with a warm, spiced apple pie filling in the center, all drizzled with a sweet caramel sauce.
Ingredients
For the Apple Filling:
2 1/2 cups peeled & finely diced apples
1 Tbsp lemon juice
1/2 cup (118ml) water
⅓ cup (71g) packed brown sugar
1 ½ tsp cinnamon
1/4 tsp nutmeg
1 Tbsp cornstarch
For the Cookies:
3 cups (360g) all purpose flour
2 tsp cornstarch
1 tsp baking soda
1 tsp cinnamon
½ tsp salt
1 cup (226g) unsalted butter, room temperature
1 1/4 cups (267g) brown sugar
1/4 cup (50g) granulated sugar
2 large eggs
1 tsp vanilla extract
For the Topping:
Caramel Sauce, store-bought
Instructions
- Step 1: To make the apple filling, combine the diced apples, lemon juice, water, brown sugar, spices, and 1 Tbsp of cornstarch in a skillet over medium-low heat.
- Step 2: Stir occasionally while the mixture simmers for 5-7 minutes, or until the apples are tender. Set aside to cool.
- Step 3: Preheat the oven to 350º F and line a cookie sheet with a silicone baking mat or parchment paper.
- Step 4: In a medium mixing bowl, combine the flour, 2 tsp cornstarch, baking soda, cinnamon, and salt. Set aside.
- Step 5: In a larger mixing bowl, beat the room temperature butter, brown sugar, and granulated sugar on medium speed for 2 minutes until the mixture is fluffy and pale.
- Step 6: Add the eggs and vanilla extract, and beat for another 30 seconds.
- Step 7: Gradually mix in the dry ingredients on low speed. The dough will be thick; finish mixing by hand with a spatula if needed.
- Step 8: Use a cookie scoop to form golf ball sized cookie dough balls and roll them into smooth balls between your hands.
- Step 9: Place about 8 cookies on the prepared cookie sheet and bake for 10-12 minutes.
- Step 10: Carefully remove the pan from the oven. Use the back of a tablespoon to create a well in the center of each cookie.
- Step 11: Add about a tablespoon of the apple filling into each well.
- Step 12: Return the cookies to the oven and bake for an additional 3-4 minutes.
- Step 13: Allow the cookies to cool for 15 minutes on the baking sheet before moving them to a wire rack.
- Step 14: Drizzle the cookies with caramel sauce before serving.
Notes
The apple filling can be made up to 3 days ahead of time and stored in the fridge until ready to use.
For even baking, it is recommended to only bake one cookie sheet at a time.
