Ingredients
1 lb ground beef
1 medium yellow onion, chopped
1 green bell pepper, chopped
2 lbs Russet potatoes, diced into 1/2-inch cubes
4 tablespoons olive oil, divided
2 cloves garlic, minced
1 can (15 oz) tomato sauce
1/2 cup ketchup
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 tablespoon yellow mustard
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cups shredded cheddar cheese
Instructions
- Step 1: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the diced potatoes and cook for 15-20 minutes, stirring occasionally, until golden brown and tender. Remove the potatoes from the skillet and set them aside.
- Step 2: Add the remaining 2 tablespoons of olive oil to the same skillet. Add the chopped onion and bell pepper and cook for about 5 minutes, until they begin to soften.
- Step 3: Add the ground beef to the skillet. Cook and crumble the meat until it is browned, then drain off any excess fat.
- Step 4: Stir in the minced garlic and cook for 30 seconds until fragrant.
- Step 5: Pour in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, salt, and pepper. Stir well to combine.
- Step 6: Bring the sauce to a simmer and let it cook for about 5 minutes to allow the flavors to meld together.
- Step 7: Return the cooked potatoes to the skillet and gently stir to coat them with the Sloppy Joe mixture.
- Step 8: Sprinkle the shredded cheddar cheese evenly over the top.
- Step 9: Cover the skillet, reduce the heat to low, and let it cook for 2-3 minutes, or until the cheese is fully melted. Serve warm.
Notes
For extra crispy potatoes, soak the diced potatoes in cold water for 30 minutes before cooking.
Ensure they are dried thoroughly before adding to the hot oil.
Ground turkey or chicken can be used as a substitute for ground beef.
For a bit of spice, add a pinch of red pepper flakes to the sauce.
