- 5 tablespoons unsalted butter, melted
- 1½ cups rhubarb, finely chopped
- ½ cup blueberries
- 1½ teaspoons sugar
- 1 teaspoon cornstarch
- ½ tablespoon lemon zest
- 1 cup granulated sugar
- 16 ounces cream cheese, room temperature
- 4 teaspoons all-purpose flour
- ¼ cup sour cream
- 3 large eggs, room temperature
- 1 tablespoon lemon juice
- 1½ teaspoons vanilla extract
- 1 pinch salt
Instructions
- Preheat oven to 350°F. Line an 8×8 inch pan with parchment paper.
- Make graham cracker crust by combining crumbs, sugar, melted butter, and lemon zest. Press into pan.
- Bake crust for 10 minutes, then cool. Reduce oven to 325°F.
- Prepare crumble topping by mixing flour, cardamom, brown sugar, and melted butter.
- Make cream cheese filling by beating cream cheese, sugar, eggs, sour cream, vanilla, and lemon juice.
- Pour filling over cooled crust. Top with rhubarb, blueberries, and crumble.
- Bake for 38-43 minutes until set but slightly jiggly.
- Cool at room temperature for 45 minutes, then refrigerate for 4 hours.
- Remove from pan using parchment paper and slice.
