Description

1/3 cup shortening
1/3 cup butter
3/4 cup sugar
1 egg
1 tsp vanilla extract
1/2 tsp almond extract
1 tsp baking powder
1/2 tsp salt
1 1/2 cups all-purpose flour
8 oz cream cheese (softened)
1 cup white chocolate chips
1 1/2 cups strawberries (chopped)
1/2 cup sugar
1/3 cup water
2 tbsp cornstarch

Instructions

  1. Step 1: Preheat the oven to 350 degrees F. Grease a 9×13 inch pan.
  2. Step 2: In a large bowl, cream together the shortening, butter, and 3/4 cup of sugar until fluffy. Beat in the egg, vanilla extract, and almond extract until well combined.
  3. Step 3: In a separate bowl, whisk together the baking powder, salt, and flour. Gradually add this dry mixture to the creamed mixture, mixing until just blended.
  4. Step 4: Spread the dough evenly into the bottom of your greased pan. Bake for 15-18 minutes, or until the edges are golden brown. Let it cool completely.
  5. Step 5: Melt the white chocolate chips in the microwave in 30-second intervals, stirring in between, until smooth. In a bowl, mix the melted white chocolate with the softened cream cheese until well blended.
  6. Step 6: Spread the cream cheese mixture over the cooled sugar cookie layer and place it in the refrigerator.
  7. Step 7: In a small saucepan, mix together 1/2 cup of sugar and the cornstarch. Add the chopped strawberries and water. Cook over medium-high heat, stirring until it comes to a boil.
  8. Step 8: Once boiling, remove the strawberry mixture from the heat and let it cool for about 10 minutes.
  9. Step 9: Pour the cooled strawberry topping over the cream cheese layer. Refrigerate for 1-2 hours, or until set.
  10. Step 10: Top with Cool Whip and refrigerate until you are ready to serve.

Notes

Ensure the cookie base is completely cool before spreading the cream cheese layer to prevent melting.

For best results, allow the dessert to chill for the full time so the layers can set properly.

Make sure cream cheese is fully softened to room temperature for a smooth, lump-free filling.
