A simple and quick recipe for creamy lemon fudge made with white chocolate, perfect for a sweet treat.

3 cups white chocolate chips
14 ounces sweetened condensed milk
4 tablespoons unsalted butter, cubed and cold
2 teaspoons lemon extract
5 to 6 drops yellow gel food coloring
1 to 2 teaspoons fresh lemon zest (optional garnish)
Instructions
- Step 1: Prepare an 8×8 straight-sided metal baking pan by lining it with parchment paper, leaving an overhang on the sides for easy removal.
- Step 2: In a microwave-safe bowl, combine the white chocolate chips, sweetened condensed milk, and butter.
- Step 3: Microwave the mixture for 1 minute, stir, and then continue heating in 30-second intervals, stirring each time, until the chocolate is completely melted and smooth.
- Step 4: Stir in the lemon extract and yellow gel food coloring until the fudge mixture is smooth and evenly colored.
- Step 5: Quickly pour the mixture into the prepared pan and spread it into an even layer. Garnish with fresh lemon zest, if desired.
- Step 6: Refrigerate the fudge for at least 2 hours, or until firm enough to slice.
- Step 7: Once set, use the parchment paper overhang to lift the fudge from the pan and cut it into 64 one-inch squares.
Notes
Ghirardelli brand white chocolate chips were used for this recipe.
Stir well between microwave intervals to prevent the white chocolate from burning or seizing.
