Description
These cheesy broccoli chicken patties are easy to make and perfect for meal prep, snacking, or a quick dinner.
Ingredients

10 ounces chicken breast or tenderloins (boneless skinless)
4 ounces broccoli (separated into small florets)
¾ cup cheddar cheese (grated)
2 eggs
1 tablespoon cornstarch
½ teaspoon garlic powder
¼ teaspoon onion powder
salt and black pepper to taste
3 tablespoon olive oil (or your preferred oil, for cooking)
Instructions
- Step 1: Bring a medium pot of water to a boil. Add the broccoli florets and blanch for 1 to 2 minutes until slightly tender. Drain well and set aside.
- Step 2: Cut the chicken into thin strips and then into small cubes. Continue chopping until the chicken is very finely diced.
- Step 3: In a large bowl, combine the diced chicken, grated cheese, eggs, garlic powder, onion powder, salt, and pepper.
- Step 4: Pat the blanched broccoli dry with paper towels. Chop the broccoli into small pieces and add it to the chicken mixture.
- Step 5: Sprinkle in the cornstarch and mix everything together until fully combined.
- Step 6: Warm 1 tablespoon of olive oil in a skillet over medium heat.
- Step 7: Scoop about 2 tablespoons of the mixture and place it onto the skillet. Gently press down to form a round patty shape.
- Step 8: Cover the skillet with a lid and cook the patties for 5 minutes.
- Step 9: Flip each patty and cook uncovered for another 5 minutes until golden brown and cooked through.
- Step 10: Transfer the cooked patties to a plate lined with paper towels to absorb excess oil. Repeat with the remaining mixture.

This recipe makes about 11 patties total.
