Description

An easy-to-make, moist pineapple pistachio cake made with cake mix and instant pudding, topped with a creamy, light pistachio frosting.

For the Pineapple Pistachio Cake:
1 box (15.25) yellow cake mix
1 box (3.4 oz) instant pistachio pudding mix
1/2 cup vegetable oil
3 large eggs
1 can (20 oz) crushed pineapple, undrained
For the Pistachio Pudding Frosting:
3/4 cup half and half milk
1/2 cup heavy cream
1 box (3.4 oz) instant pistachio pudding mix
8 oz Cool Whip, thawed
chopped pistachios (optional for topping)


Instructions

  1. Step 1: Preheat your oven to 350°F and spray a 9×13 inch cake pan with nonstick spray.
  2. Step 2: In a large mixing bowl, combine the yellow cake mix, one box of instant pistachio pudding mix, vegetable oil, eggs, and the undrained can of crushed pineapple.
  3. Step 3: Using an electric mixer, beat the ingredients on medium-high speed for 1-2 minutes until everything is thoroughly combined.
  4. Step 4: Pour the batter into the prepared cake pan and spread it out evenly.
  5. Step 5: Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean and the cake edges pull away from the sides of the pan.
  6. Step 6: Remove the cake from the oven and allow it to cool completely on a wire rack for about 1 hour.
  7. Step 7: To make the frosting, whisk together the half and half, heavy cream, and the second box of instant pistachio pudding mix in a large bowl until it begins to thicken. Let it sit for 5 minutes to set further.
  8. Step 8: Gently fold the thawed Cool Whip into the pudding mixture until it is fully combined.
  9. Step 9: Spread the frosting evenly over the top of the cooled cake.
  10. Step 10: Cover the cake and refrigerate for at least 2-6 hours before serving for the best flavor and texture. Garnish with optional chopped pistachios just before serving.

Notes

For the best results, ensure the cake is completely cool before adding the frosting.

Refrigerating the cake for at least a few hours is highly recommended as it enhances the flavor and texture.
