Description
A classic peach cobbler featuring a delicious fruit filling and topped with unique, fluffy blueberry drop biscuits.
Ingredients

¾ cup sugar, divided
3 tablespoons cornstarch
8 cups sliced fresh peaches
2½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
½ cup cold butter, cut into ½-inch pieces
2 cups fresh blueberries
1 cup heavy whipping cream
Instructions
- Step 1: Preheat your oven to 350°F and spray a 13×9-inch baking dish with cooking spray.
- Step 2: In a large bowl, stir together ¼ cup of the sugar and the cornstarch.
- Step 3: Add the sliced peaches to the sugar mixture, tossing gently to coat them.
- Step 4: Spoon the peach mixture into the prepared baking dish.
- Step 5: In the same bowl, whisk together the flour, baking powder, salt, and the remaining ½ cup of sugar
- Step 6: Using a pastry blender, cut the cold butter into the flour mixture until it is crumbly.
- Step 7: Stir in the blueberries.
- Step 8: Gradually add the heavy whipping cream, stirring just until the dry ingredients are moistened.
- Step 9: Drop the dough by tablespoonfuls over the peaches in the baking dish.
- Step 10: Bake for 45 to 55 minutes, or until the biscuits are golden brown.
- Step 11: Let the cobbler cool for at least 30 minutes before serving.
Notes
To make this cobbler year-round, use 3 (20-ounce) bags of thawed frozen peaches and 1 (16-ounce) bag of frozen blueberries that have been thawed and drained in place of fresh fruit.
