Description
A quick and easy no-bake recipe for delicious sugar cookie bites, made with almond flour and cream cheese, and coated in a white chocolate shell.

1 1/4 cup almond flour
4 oz low fat or Neufchâtel cream cheese
1 1/2 Tbsp pure maple syrup
1 tsp vanilla extract
1 cup white chocolate chips
1/2 tsp coconut oil
Instructions
- Step 1: In a microwave-safe bowl, melt the cream cheese on high for 1 minute until softened.
- Step 2: Add the maple syrup and vanilla extract to the softened cream cheese and stir until thoroughly combined.
- Step 3: Mix in the almond flour until a dough-like consistency forms.
- Step 4: Line a sheet pan with parchment paper. Roll the dough into 1-tablespoon-sized balls and place them on the pan.
- Step 5: Place the pan in the freezer for 5 minutes for a quick chill.
- Step 6: While the dough balls are chilling, melt the white chocolate chips and coconut oil together in a separate microwave-safe bowl until completely melted and smooth.
- Step 7: Remove the chilled cookie balls from the freezer and carefully dip each one into the melted chocolate, returning them to the sheet pan.
- Step 8: If using sprinkles, add them immediately after dipping because the chocolate will harden quickly.
- Step 9: Return the coated bites to the freezer for a final 5 minutes to set the chocolate shell.
Notes
For a smooth dough, ensure the cream cheese is fully softened before mixing.
Work quickly when adding sprinkles as the cold dough balls will cause the chocolate shell to set fast.
Store the finished cookie bites in an airtight container in the refrigerator.
