A creamy no-bake pie with a graham cracker crust and a rich cannoli-inspired filling.

- 12 graham cracker sheets
- ¼ cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 1 ½ cups heavy whipping cream
- 8 ounces mascarpone
- ¾ cup confectioners’ sugar
- 1 cup whole milk ricotta cheese
- 1 teaspoon vanilla extract
- ⅛ teaspoon cinnamon
- 1 teaspoon orange zest
- ¾ cup mini chocolate chips
Instructions
- Preheat oven to 350 F.
- Pulse graham crackers in a food processor until finely ground.
- Add granulated sugar and melted butter; pulse until mixture resembles wet sand.
- Press mixture into bottom and sides of an ungreased pie dish.
- Bake for 10 minutes. Let cool completely.
- Beat heavy cream until stiff peaks form; set aside.
- Beat mascarpone until smooth.
- Mix in confectioners’ sugar until combined.
- Add ricotta, vanilla extract, cinnamon, and orange zest; beat well.
- Gently fold in whipped cream.
- Mix in mini chocolate chips.
- Spread filling evenly into cooled crust.
- Refrigerate at least 3 hours until set.
- Top with whipped cream and chocolate chips if desired.
- Cut and serve.
Notes
- Use cold heavy cream for better whipping.
- Ensure pie crust is completely cooled before adding filling.
- Refrigerate pie to allow filling to set properly.
