For the Brownie Base From Scratch
1 ½ cups granulated sugar
½ cup butter, melted
2 eggs
1 ½ teaspoons vanilla extract
¼ teaspoon salt
½ cup unsweetened cocoa powder
¾ cup all purpose flour
½ cup chocolate chips

OR

1 box brownie mix prepared according to package directions

For the Coconut Layer
1 ½ cups sweetened condensed milk
1 cup confectioners sugar
4 ½ cups sweetened flaked coconut

For the Chocolate Topping
1 cup semi sweet chocolate chips
1 tablespoon butter
½ cup heavy cream


Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Lightly grease a 9×9 baking pan.
  2. Prepare brownie batter using either the boxed mix instructions or the from scratch ingredients. If making from scratch, mix sugar and melted butter until smooth. Add eggs and vanilla. Stir in salt and cocoa powder, then fold in flour and chocolate chips.
  3. Spread the batter evenly in the prepared pan. Bake for 22 to 25 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Cool completely.
  4. In a bowl, mix sweetened condensed milk, confectioners sugar, and flaked coconut until thick and fully combined. Spread evenly over cooled brownies and gently press into place.
  5. In a microwave safe bowl, combine heavy cream, butter, and chocolate chips. Heat in 30 second intervals, stirring between each, until smooth.
  6. Pour the chocolate mixture over the coconut layer and spread evenly. Let sit at room temperature for 30 minutes, then refrigerate until fully set.
  7. Slice and serve.

Notes

Allow brownies to cool completely before adding the coconut layer to prevent melting.

Chilling before slicing helps create clean layers.

For a deeper chocolate flavor, use dark chocolate chips.

Store leftovers in the refrigerator for best texture.
