Description
A moist quick bread featuring layers of sweet apple and cinnamon, finished with a simple cinnamon glaze. Perfect for breakfast or as a dessert.
Ingredients
For the Bread:
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
2 teaspoons vanilla extract
2 large eggs
1/2 cup milk
For the Apple Filling:
1 large apple, peeled, cored, and chopped small
1/2 cup light brown sugar, packed
1 1/2 teaspoons ground cinnamon
For the Topping:
2 tablespoons brown sugar
1/4 teaspoon ground cinnamon
For the Glaze:
3/4 cups confectioners’ sugar
1/4 teaspoon ground cinnamon
2 tablespoons water
Instructions
- Step 1: Preheat the oven to 350 degrees Fahrenheit. Grease and flour an 8.5 x 4.5 inch loaf pan.
- Step 2: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- Step 3: In a separate large bowl, use an electric mixer to beat the softened butter, granulated sugar, and vanilla on medium-high speed until smooth and pale, about 3-4 minutes.
- Step 4: Beat in the eggs one at a time until just incorporated.
- Step 5: With the mixer on low, add half of the flour mixture, then half of the milk. Repeat with the remaining flour mixture and milk, mixing just until combined.
- Step 6: In another bowl, prepare the apple filling by combining the chopped apple, 1/2 cup light brown sugar, and 1 1/2 teaspoons of cinnamon.
- Step 7: In a small bowl, prepare the topping by combining 2 tablespoons of brown sugar and 1/4 teaspoon of cinnamon.
- Step 8: Pour half of the batter into the prepared loaf pan. Spoon half of the apple mixture over the batter. Use a knife to lightly swirl the filling into the batter.
- Step 9: Pour the remaining batter over the top, followed by the rest of the apple mixture. Swirl again lightly and then sprinkle the cinnamon-sugar topping evenly over the surface.
- Step 10: Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out with only a few moist crumbs attached.
- Step 11: Let the bread cool in the pan for 15-20 minutes.
- Step 12: While the bread cools, whisk together the confectioners’ sugar, 1/4 teaspoon cinnamon, and water to create the glaze.
- Step 13: Remove the bread from the pan and place it on a cooling rack. Drizzle the glaze over the warm bread and allow it to cool completely before slicing and serving.
Notes
When testing for doneness, a few moist crumbs are expected on the toothpick due to the soft apples in the center.
For a distinct layered look, be careful not to over-swirl the apple filling into the batter.
