Ingredients

  • 1 1/2 lb sirloin beef steak, cut into thin strips
  • 1 Tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1/2 tsp garlic powder
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 Tbsp unsalted butter
  • 1 Tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 cloves garlic, minced
  • 1/2 tsp crushed red pepper, optional
  • 1 tsp cornstarch, optional

Instructions

  1. Pat the steak strips dry with paper towels.
  2. Toss the steak with olive oil, salt, black pepper, and garlic powder.
  3. Let the steak rest at room temperature for 10 minutes.
  4. Whisk honey, soy sauce, rice vinegar, sesame oil, garlic, and red pepper in a small bowl.
  5. Mix in the cornstarch if you want a thicker glaze.
  6. Heat a large heavy skillet over medium-high heat for 2 to 3 minutes.
  7. Add the steak strips in a single layer and cook for 1 to 2 minutes.
  8. Flip the strips and cook for 1 to 2 minutes more until browned and just cooked through.
  9. Move the cooked steak to a plate and cook the rest in batches.
  10. Lower the heat to medium and pour the glaze into the skillet.
  11. Stir and scrape up the browned bits, then simmer for 1 to 3 minutes until slightly thickened.
  12. Return the steak and any juices to the skillet and toss to coat.
  13. Cook for 1 minute more, then serve hot.

Notes

  • Cut the steak into even strips so it cooks at the same rate.
  • Do not crowd the pan. Cook in batches if needed.
  • Use cornstarch only if you want a thicker glaze.
  • Serve with rice, noodles, or steamed vegetables.
  • You can adjust the red pepper to change the heat level.
