Description

A simple and delicious recipe for making crispy zucchini fritters, perfect as an appetizer or a side dish.


Ingredients

3 tbsp avocado, canola, or vegetable oil (for cooking)
2 cups shredded zucchini, squeezed (from 2 large zucchini, around 1.5 lbs)
1 cup Panko bread crumbs
2 eggs
1/3 cup fresh grated Parmesan cheese
1/4 cup finely shredded Mozzarella cheese
2 garlic cloves, minced
salt, to taste
fresh cracked black pepper, to taste


Instructions

  1. Step 1: Grate the zucchini using the side with larger holes on a box grater.
  2. Step 2: Transfer the grated zucchini into a mesh bag or cheesecloth and squeeze out as much liquid as you can.
  3. Step 3: In a large mixing bowl, add the squeezed zucchini, Panko bread crumbs, eggs, Parmesan cheese, Mozzarella cheese, minced garlic, salt, and pepper.
  4. Step 4: Mix all ingredients well until they are thoroughly incorporated.
  5. Step 5: Preheat a large cooking pan over medium heat, then lower the temperature slightly. Add the oil.
  6. Step 6: Use a scoop to portion the zucchini mixture. Gently shape it into fritters with your hands and carefully place them into the pan.
  7. Step 7: Cook for 4-6 minutes on each side. Flip only once to prevent them from breaking apart.
  8. Step 8: If cooking in multiple batches, add a little more oil to the pan between batches as needed.

Notes

Squeezing as much liquid as possible from the zucchini is the key to preventing soggy fritters.

Cook the fritters over medium to medium-low heat. If the heat is too high, the outside will cook too quickly and the center will be under-cooked.

To prevent the fritters from breaking, avoid disturbing them while cooking and try to flip them only one time.
