5 large ripe bananas, sliced
1 cup granulated sugar
½ cup brown sugar
1 cup all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 teaspoon ground cinnamon
1 cup whole milk
1 teaspoon pure vanilla extract
½ cup (1 stick) unsalted butter, melted
¼ teaspoon nutmeg (optional)


Instructions

  1. Step 1: Preheat your oven to 350°F (175°C) and lightly grease your baking dish.
  2. Step 2: Slice the bananas into thick rounds and spread them evenly across the bottom of the baking dish.
  3. Step 3: In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, salt, cinnamon, and nutmeg if using.
  4. Step 4: Pour in the milk and vanilla extract, then stir gently until just combined. Do not overmix.
  5. Step 5: Slowly stir in the melted butter until the batter becomes glossy and rich.
  6. Step 6: Carefully pour the batter over the banana layer without stirring.

Notes

For a sweeter cobbler, use very ripe bananas.

For an extra caramel note, you can sprinkle a little brown sugar over the bananas before adding the batter.
