Easy Smothered Cheesy Beef Enchiladas

Description

Savory beef and bean enchiladas smothered in red sauce and a generous layer of melted Mexican-blend cheese, baked to perfection.


Ingredients

2 tablespoons canola oil
1 small yellow onion, diced
2 garlic cloves, minced
1 jalapeno, seeds removed and minced
1 ¾ pounds ground beef
kosher salt
black pepper
1 14.5-ounce can black beans, drained and rinsed
8 flour tortillas
4 cups Mexican-blend shredded cheese, divided
3 cups store-bought or homemade red enchilada sauce, divided
fresh cilantro for garnish


Instructions

  1. Step 1: Preheat the oven to 350 degrees Fahrenheit and grease a 9 x 13-inch baking dish.
  2. Step 2: Heat the canola oil in a large pan over medium-high heat. Add the beef and cook, breaking it up with a spoon, until about halfway cooked.
  3. Step 3: Add the onion, garlic, and jalapeno to the pan. Cook and stir until the beef is cooked through and no longer pink, about 5-6 minutes.
  4. Step 4: Remove the pan from the heat and transfer the beef mixture to a colander to drain the excess liquid.
  5. Step 5: To assemble, lay a tortilla on a plate and spread about 2 tablespoons of enchilada sauce on top. Arrange 1 to 2 tablespoons of black beans in a line at the center.
  6. Step 6: Top the beans with a heaping spoonful of the beef mixture, an additional 1 tablespoon of sauce, and about ⅓ cup of cheese.
  7. Step 7: Roll the enchilada tightly and place it seam-side down in the prepared baking dish. Repeat with the remaining tortillas and filling.
  8. Step 8: Pour the remaining enchilada sauce over the top of the enchiladas and sprinkle with the remaining cheese.
  9. Step 9: Bake uncovered on the middle rack for 20-22 minutes, or until the filling is warmed through and the cheese is melted.
  10. Step 10: Remove from the oven, let rest for about 5 minutes, then garnish with fresh cilantro and serve hot.

Notes

You can use either store-bought or homemade red enchilada sauce for this recipe.

Letting the enchiladas rest for a few minutes after baking helps them set and makes serving easier.
