For the Crust:
2 cups flour
1/3 cup sugar
1 cup salted butter
For the Filling:
1 1/2 cups sugar
1/2 cup flour
1 cup half and half
3 eggs
1 teaspoon vanilla
5 cups diced rhubarb
For the Frosting:
6 ounces cream cheese, softened
1 1/2 cups powdered sugar
1 teaspoon vanilla
1 cup whipped topping
Instructions
- Step 1: Preheat your oven to 350°F and line a 9×13 inch pan with parchment paper.
- Step 2: In a large bowl, combine 2 cups of flour and 1/3 cup of sugar. Cut in the butter with a fork until the mixture is crumbly.
- Step 3: Press the crust mixture evenly into the bottom of the prepared pan and bake for 10 minutes.
- Step 4: While the crust bakes, prepare the filling. In a large bowl, whisk together 1 1/2 cups of sugar, 1/2 cup of flour, the half and half, eggs, and 1 teaspoon of vanilla.
- Step 5: Stir the diced rhubarb into the filling mixture.
- Step 6: Pour the filling over the warm crust and bake for an additional 40 to 50 minutes, or until the filling is set.
- Step 7: Let the bars cool completely in the pan.
- Step 8: To make the frosting, whisk together the softened cream cheese, powdered sugar, and 1 teaspoon of vanilla until smooth.
- Step 9: Fold the whipped topping into the cream cheese mixture.
- Step 10: Spread the frosting evenly over the cooled bars.
- Step 11: Keep the bars refrigerated until you are ready to serve.
Notes
Whole milk can be used as a substitute for half and half in the filling.
Ensure the bars are completely cool before applying the frosting to prevent it from melting.
