½ cup unsalted butter, melted
1 cup granulated sugar
¼ teaspoon kosher salt
1 large egg, room temperature
1 teaspoon pure vanilla extract
½ teaspoon pure almond extract
1 ¼ cup all-purpose flour, divided
1 cup frozen raspberries
½ cup white chocolate chips


Instructions

  1. Step 1: Preheat your oven to 350°F (177°C) and line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides to use as handles.
  2. Step 2: In a large bowl, whisk together the melted butter, granulated sugar, and kosher salt until well combined.
  3. Step 3: Add the egg, vanilla extract, and almond extract. Whisk for about 1 minute until the mixture is fully combined, scraping down the sides of the bowl as needed.
  4. Step 4: Reserve a tablespoon of the flour. Add the remaining flour to the bowl and mix with a spatula until some large flour streaks remain.
  5. Step 5: Add the white chocolate chips and mix until just a few streaks of flour are left. Do not overmix.
  6. Step 6: In a separate small bowl, toss the frozen raspberries with the reserved tablespoon of flour. Gently fold the coated raspberries into the blondie batter.
  7. Step 7: The batter will be thick. Spread it evenly into the prepared baking pan.
  8. Step 8: Bake for 30 to 35 minutes, or until the edges are lightly browned and a tester inserted into the center comes out with a few moist crumbs attached.
  9. Step 9: Allow the blondies to cool completely in the pan on a wire cooling rack.
  10. Step 10: Once cool, use the parchment paper overhang to lift the blondies from the pan. Cut into your desired size and serve.

Notes

The batter is meant to be very thick; this is normal.

Tossing the raspberries in flour helps prevent them from sinking to the bottom during baking.

For the best chewy texture, be careful not to overbake. The center should be slightly gooey when removed from the oven.

Allow the blondies to cool completely before cutting to ensure clean, neat squares.
