Description

A delicious layered bar recipe featuring a shortbread-like crust, a sweet raspberry jam filling, and a chewy coconut topping.

For the Crust:
1 1/4 cups all-purpose flour
1/2 cup salted butter
1/4 cup white granulated sugar
For the Topping:
1 cup raspberry jam of your choice
2 large eggs
2 cups sweetened shredded coconut
1/4 teaspoon baking powder
3 tablespoon all purpose flour
1 teaspoon vanilla


Instructions

  1. Step 1: Preheat your oven to 350 degrees F. Grease an 8×8 or 9×9 inch pan and set it aside.
  2. Step 2: In a bowl, mix 1 1/4 cups of all-purpose flour and the white granulated sugar for the crust.
  3. Step 3: Cut in the salted butter with a pastry cutter until the mixture resembles crumbs, then pat the crust evenly into the bottom of the prepared baking dish
  4. Step 4: Bake the crust for 10-12 minutes until it is lightly browned. Remove from the oven.
  5. Step 5: Spread the raspberry jam evenly over the top of the warm crust.
  6. Step 6: In a separate bowl, mix the eggs, sweetened shredded coconut, baking powder, 3 tablespoons of all-purpose flour, and vanilla until well combined
  7. Step 7: Spread the coconut topping mixture evenly over the jam layer.
  8. Step 8: Return the pan to the oven and bake for 25-35 minutes, or until the filling is firm and set.
  9. Step 9: Remove the bars from the oven and allow them to cool completely in the pan.
  10. Step 10: Once fully cooled, slice into bars and serve.

Notes

Ensure the bars are cooled completely before slicing to get clean cuts.
These bars freeze exceptionally well.
