A moist pumpkin cake base topped with a smooth cream cheese layer and a sweet, crumbly streusel. Perfect for a fall treat or dessert.
Ingredients
For the Cake:
1 1/2 cup flour
1/2 cup sugar
2 tsp. baking powder
1/2 tsp. baking soda
2 tsp. pumpkin pie spice
1 tsp. cinnamon
1/2 tsp. salt
1 cup pumpkin puree
2/3 cup evaporated milk or milk
1 large egg
1 tsp. vanilla
For the Cream Cheese Layer:
8 oz. softened cream cheese
1 tsp. vanilla
3 Tbsp. sugar
For the Streusel Topping:
3/4 cup sugar
1/4 cup packed brown sugar
1/2 cup flour
1 1/2 tsp. pumpkin pie spice
1/2 tsp. baking powder
1 pinch salt
6 Tbsp. cold butter
Instructions
- Step 1: Preheat your oven to 350 degrees F. Grease a 9×9 or 8×8 inch pan, or line it with parchment paper.
- Step 2: In a large bowl, whisk together the flour, 1/2 cup sugar, 2 tsp. baking powder, baking soda, 2 tsp. pumpkin pie spice, cinnamon, and 1/2 tsp. salt.
- Step 3: In a separate bowl, whisk together the pumpkin puree, evaporated milk, egg, and 1 tsp. vanilla.
- Step 4: Pour the wet ingredients into the dry ingredients and stir just until everything is combined. Pour this batter into your prepared pan.
- Step 5: To make the cream cheese layer, combine the softened cream cheese, 1 tsp. vanilla, and 3 Tbsp. sugar. Mix until smooth.
- Step 6: Drop dollops of the cream cheese mixture over the cake batter. Use a spoon or an offset spatula to gently spread it into an even layer.
- Step 7: To make the streusel, combine 3/4 cup sugar, brown sugar, 1/2 cup flour, 1 1/2 tsp. pumpkin pie spice, 1/2 tsp. baking powder, and a pinch of salt. Use a pastry blender or a fork to cut in the cold butter until the mixture is crumbly.
- Step 8: Sprinkle the streusel topping evenly over the cream cheese layer.
- Step 9: Bake for 30 to 40 minutes, or until a toothpick inserted into the cake portion comes out clean.
- Step 10: Let the cake cool completely in the pan before slicing and serving.
Notes
For an easier to spread cream cheese layer, you can briefly microwave the cream cheese to soften it further before mixing.
Allow the cake to cool completely for cleaner slices and the best texture.
You can use either a 9×9 inch or an 8×8 inch pan; note that baking time may vary slightly.
