Easy No-Bake Peaches and Cream Freeze Bars

Description

A refreshing no-bake frozen dessert featuring a creamy peach filling on top of a sweet vanilla wafer crust, perfect for a summer treat.


Ingredients

8 tablespoons (1 stick) unsalted butter, melted and cooled
50 vanilla wafer cookies (about 6 1/2 ounces)
2 tablespoons granulated sugar
1/2 teaspoon kosher salt
12 ounces fresh peaches, unpeeled, quartered, and pitted (about 4 medium)
1 (14-ounce) can sweetened condensed milk
1/4 teaspoon kosher salt
2 cups cold heavy cream
12 peach slices, for garnish


Instructions

  1. Step 1: Line an 8-inch square baking pan with two perpendicular sheets of parchment paper, leaving a 2-inch overhang on all sides to create a sling.
  2. Step 2: In a food processor, process 50 vanilla wafers, 2 tablespoons of sugar, and 1/2 teaspoon of salt until the mixture has the texture of sand, about 15 seconds.
  3. Step 3: Reserve 1 tablespoon of the vanilla wafer crumbs for garnish. Add 1 stick of melted butter to the remaining crumbs in the food processor and pulse 6 to 8 times to combine.
  4. Step 4: Transfer the crumb mixture to the prepared pan. Use the bottom of a flat measuring cup or your fingers to press it into an even layer, covering the bottom completely.
  5. Step 5: Wipe the food processor clean. Add 12 ounces of quartered peaches and process until smooth. Then add the sweetened condensed milk and 1/4 teaspoon of salt, and process until combined. Transfer to a large bowl
  6. Step 6: Wash and dry the food processor. Add 2 cups of cold heavy cream and process until soft peaks form, about 1 to 2 minutes.
  7. Step 7: Reserve and refrigerate a heaping 1/2 cup of the whipped cream for garnish. Gently whisk the remaining whipped cream into the peach mixture until no streaks remain.
  8. Step 8: Pour the filling over the crust and smooth it into an even layer. Cover the pan and freeze until firm, for at least 5 hours or up to overnight.
  9. Step 9: Using the parchment sling, lift the frozen slab from the pan onto a cutting board. Cut into 12 bars, wiping the knife clean between each cut.
  10. Step 10: Top each bar with a dollop of the reserved whipped cream, a sprinkle of the reserved vanilla wafer crumbs, and a fresh peach slice before serving.

Notes

Frozen peach substitute: 1 (16-ounce) bag of frozen peach slices can be used. Use 12 ounces of unthawed slices for the filling and the remainder for garnish.

Storage: Freeze leftovers in an airtight container for up to 1 week.
