Description

A creamy and fruity dessert salad featuring vanilla pudding, Cool Whip, and crunchy Fudge Stripe cookies, perfect for a quick and easy treat.

Ingredients

Scale

1 1/2 cups buttermilk
1 box (5.1oz) vanilla pudding (or french vanilla, or cheesecake)
1 tub (8 oz) Cool Whip whipped topping, thawed
1 can (20oz) pineapple chunks, well drained
1 can (11oz) mandarin oranges, well drained
12 Fudge Stripes Cookies, divided

Instructions

Step 1: In a large bowl, whisk the buttermilk and pudding mix together for two minutes.

Step 2: Fold in the thawed whipped topping, the well drained pineapple chunks, and the well drained mandarin oranges.

Step 3: Cover and chill the mixture in the refrigerator for at least one hour.

Step 4: Right before serving, break 10 of the Fudge Stripe cookies into bite sized pieces and gently fold them into the chilled pudding mixture.

Step 5: Transfer the salad to a serving dish and garnish with the remaining two cookies, serving them whole or crushed.

Notes

Ensure the canned fruit is very well drained to prevent the salad from becoming watery.

For the best texture, do not add the cookies until just before you are ready to serve.

French vanilla or cheesecake flavored pudding mix can be used as a substitute for vanilla.
