Description
Quick and easy no-bake dessert featuring a creamy cheesecake filling and fresh fruit salad rolled up in a cinnamon-sugar coated tortilla.
Ingredients
½ cup unsalted butter, softened
1½ cups powdered sugar
6 oz cream cheese, room temperature
1 teaspoon vanilla extract
1¼ cups whipped topping, or ½ cup chilled heavy cream plus 2½ Tbsp powdered sugar
2/3 cup fresh blueberries
2/3 cup small-diced fresh strawberries
3 small peaches, peeled and diced
2 kiwi, peeled and small-diced
½ cup fresh raspberries, halved
2 (1 oz) boxes sugar-free vanilla instant pudding mix
4 to 5 large flour tortillas at room temperature
2–3 Tbsp melted unsalted butter
½ cup granulated sugar
1 teaspoon ground cinnamon, or to taste
Instructions
- Step 1: If making your own whipped cream, beat the chilled heavy cream until soft peaks form. Add 2½ Tbsp powdered sugar and continue beating until stiff peaks form. Set aside.
- Step 2: In a large bowl, beat the softened butter, cream cheese, vanilla extract, and 1½ cups of powdered sugar together until the mixture is smooth.
- Step 3: Gently fold the whipped topping or homemade whipped cream into the cream cheese mixture until evenly combined.
- Step 4: Using a rubber spatula, stir in the instant pudding mix until the filling thickens.
- Step 5: Gently fold in the blueberries, strawberries, peaches, and kiwi. Reserve most of the raspberries to add later.
- Step 6: Chill the filling mixture for about 30 minutes to allow it to firm up slightly.
- Step 7: Lay a tortilla flat and spread an even layer of the chilled cheesecake filling over it. Scatter some of the reserved raspberries on top.
- Step 8: Roll the tortilla up tightly and brush the entire outside of the roll with melted butter.
- Step 9: On a separate plate, mix together the granulated sugar and ground cinnamon. Roll the buttered tortilla in the cinnamon-sugar mixture until it is fully coated.
- Step 10: Slice the roll into ⅔ to ¾ inch thick pinwheels and serve immediately
Notes
For best results, use room temperature tortillas and cream cheese.
Reserve some raspberries to add just before rolling to prevent the filling from turning pink.
These roll-ups are best served immediately to maintain their texture.
Adjust the amount of cinnamon in the sugar coating to your personal taste.
