A moist and flavorful quick bread featuring zucchini, blueberries, and a bright lemon glaze. Perfect for a breakfast treat or dessert.
Ingredients
For the Bread:
2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 large eggs
1/2 cup canola oil
2/3 cup sugar
1/2 cup buttermilk
2 tablespoons fresh lemon juice (about one large lemon)
Zest from one lemon
1 cup zucchini (shredded and drained)
3/4 cup blueberries (fresh or frozen, not thawed)
For the Glaze:
1 cup powdered sugar (sifted)
2 tablespoons fresh lemon juice or milk
Instructions
- Step 1: Preheat the oven to 350 F. Butter and flour a 9×5 loaf pan.
- Step 2: In a medium bowl, whisk together the flour, baking powder, and salt. Set this aside.
- Step 3: In a large bowl, beat the eggs with a mixer until they are light yellow.
- Step 4: With the mixer on low-medium speed, add the oil and sugar, then mix in the buttermilk, 2 tablespoons of lemon juice, and lemon zest.
- Step 5: Fold in the shredded and drained zucchini.
- Step 6: Stir in the dry ingredients just until they are combined. Do not overmix.
- Step 7: Gently fold in the blueberries.
- Step 8: Transfer the batter to the prepared loaf pan.
- Step 9: Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean.
- Step 10: Let the bread cool in the pan on a wire rack for 15 minutes.
- Step 11: Remove the bread from the pan and let it cool completely on the wire rack.
- Step 12: Once the bread is completely cool, place a sheet of waxed paper under the cooling rack to catch drips
- Step 13: Prepare the glaze by combining the sifted powdered sugar and 2 tablespoons of fresh lemon juice or milk in a small bowl. Whisk until smooth.
- Step 14: Drizzle the glaze over the top of the cooled bread.
Notes
Use fresh or frozen blueberries, but do not thaw them if using frozen.
Ensure the zucchini is well-drained to prevent the bread from becoming too soggy.
Allow the bread to cool completely before adding the glaze to prevent it from melting off.
