For the Crust:
12 Graham Crackers, Crushed
1/2 cup Sugar
1 tsp Cinnamon
1/2 tsp Nutmeg
1/2 cup Butter, Melted
For the Cheesecake Filling:
2 (8 oz) Cream Cheese, Softened
1 cup Sugar
4 Eggs, Beaten
1 tsp Vanilla
For the Peach Filling:
1 (21 oz) can Peach Pie Filling
1/4 cup Sugar
1/4 cup Brown Sugar
1 tsp Cinnamon
For the Cobbler Topping:
1 cup Flour
2/3 cup Brown Sugar
1 tsp Cinnamon
1/2 cup Butter, Cold
Instructions
- Step 1: Preheat the oven to 375 degrees.
- Step 2: To make the crust, pulse together the crushed graham crackers, 1/2 cup sugar, 1 tsp cinnamon, and nutmeg. Add the melted butter and pulse until the crumbs are well moistened.
- Step 3: Firmly press the crust mixture evenly into the bottom of a 9 x 13 inch pan.
- Step 4: To make the cheesecake, beat the softened cream cheese in a large bowl until creamy. Beat in 1 cup of sugar, the beaten eggs, and vanilla until the mixture is smooth.
- Step 5: Spread the cheesecake filling evenly over the prepared crust.
- Step 6: Bake for 22 minutes.
- Step 7: While the cheesecake bakes, prepare the toppings. In a separate bowl, make the peach filling by combining the can of peach pie filling, 1/4 cup sugar, 1/4 cup brown sugar, and 1 tsp cinnamon
- Step 8: In another bowl, make the cobbler topping by combining the flour, 2/3 cup brown sugar, and 1 tsp cinnamon. Use a fork to cut in the cold butter until the mixture is crumbly.
- Step 9: After 22 minutes, remove the cheesecake from the oven. Gently spoon small dollops of the peach filling over the cheesecake.
- Step 10: Sprinkle the cobbler topping evenly over the peach filling.
- Step 11: Return the pan to the oven and bake for an additional 17 minutes.
