A layered dessert featuring a baked vanilla wafer crust, a creamy cheese layer, lemon pudding, and a light whipped topping.

11 ounce box vanilla wafers
1/2 cup butter, melted
8 ounces cream cheese, softened
1 cup powdered sugar
1 tablespoon lemon juice
8 ounces whipped topping, defrosted and divided
6.8 ounces instant lemon pudding (2 small boxes)
3 cups milk
Instructions
- Step 1: Preheat your oven to 400℉ and lightly coat a 9 x 13 inch pan with non-stick cooking spray.
- Step 2: Crush the vanilla wafers, mix them with the melted butter, and press the mixture evenly into the bottom of the prepared pan.
- Step 3: Bake the crust for 5 minutes, then remove from the oven and allow it to cool completely.
- Step 4: In a separate bowl, mix the softened cream cheese, powdered sugar, lemon juice, and 1 cup of the whipped topping until smooth.
- Step 5: Spread the cream cheese mixture evenly over the cooled crust.
- Step 6: In another bowl, whisk together the instant lemon pudding mix and the milk until it begins to thicken.
- Step 7: Spread the pudding mixture over the cream cheese layer and chill the dessert in the refrigerator until the pudding is set.
- Step 8: Top the set pudding with the remaining whipped topping. Store the dessert covered in the refrigerator.
Notes
Ensure the crust is completely cooled before adding the filling to prevent it from melting.
Use cold milk to help the instant pudding set properly.
For best results, allow the dessert to chill for at least 1-2 hours before serving.
