For the Pie:
1/2 cup bisquick baking mix
1/4 cup white granulated sugar
3/4 cup milk
2 tbsp softened butter
1/4 to 1 tsp almond extract
2 large eggs
1 can (21 oz) Cherry pie filling
For the Streusel Topping:
1/4 cup bisquick mix
1/4 cup packed brown sugar
1/4 to 1 tsp cinnamon
1 to 2 tbsp softened butter


Instructions

  1. Step 1: Preheat your oven to 400 F and grease a 9-inch pie plate.
  2. Step 2: Drain the cherries from the pie filling, setting aside the cherries and reserving the liquid.
  3. Step 3: To make the pie batter, combine the 1/2 cup bisquick, white sugar, milk, 2 tbsp softened butter, almond extract, and eggs in a small bowl. Whisk until smooth.
  4. Step 4: Pour the batter into the prepared pie plate.
  5. Step 5: Spoon the drained cherries evenly over the batter. Optionally, add several 1 teaspoon dollops of the reserved cherry liquid around the pie.
  6. Step 6: Bake for 20 minutes.
  7. Step 7: While the pie is baking, prepare the streusel. In a separate bowl, stir together the 1/4 cup bisquick mix, packed brown sugar, and cinnamon.
  8. Step 8: Cut in 1 to 2 tablespoons of softened butter until the mixture resembles coarse crumbs.
  9. Step 9: After 20 minutes, carefully remove the pie from the oven and sprinkle the streusel topping evenly over the top.
  10. Step 10: Return the pie to the oven and continue to bake until a knife inserted in the center comes out mostly clean and the streusel is lightly browned.
  11. Step 11: Allow the pie to cool completely before slicing.

Notes

Keep the finished pie refrigerated.
