Description
A warm and gooey self-saucing cobbler that captures all the classic flavors of carrot cake in a simple, baked dessert.
Ingredients
1 cup plus 3 tablespoons all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup granulated sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cloves
1/2 cup unsweetened applesauce
1/4 cup milk
1/4 cup melted butter or vegetable oil
1 1/2 teaspoons vanilla
1 cup grated carrot
1/3 cup granulated sugar
1/3 cup brown sugar
1/4 cup chopped walnuts or pecans
1 1/2 cups very hot water
Instructions
- Step 1: Preheat the oven to 350° F.
- Step 2: In a medium sized bowl, stir together the flour, baking powder, salt, 3/4 cup of granulated sugar, cinnamon, nutmeg, and cloves. Set aside.
- Step 3: In a smaller bowl, stir the applesauce, milk, melted butter, vanilla, and grated carrot together until combined.
- Step 4: Pour the wet ingredients into the dry ingredients and mix to create a thick batter. Pour and spread the batter into a small 8-inch rectangular casserole dish with high sides.
- Step 5: In a separate bowl, stir the remaining 1/3 cup of granulated sugar, the brown sugar, and the walnuts together.
- Step 6: Spread this sugar mixture evenly over the top of the batter.
- Step 7: Carefully pour the very hot water over the entire surface. Do not stir.
- Step 8: Place the dish on a baking sheet and bake for 40 to 50 minutes, or until the middle is set.
- Step 9: Allow the cobbler to cool for 5 to 10 minutes before serving.
Notes
Be sure to place the dish on a baking sheet in the oven in case it bubbles over.
Serve warm, optionally with more nuts and cheesecake ice cream.
