For the Cake:
3 eggs, at room temperature
1 cup granulated sugar
2 teaspoons vanilla extract
1/2 cup (1 stick) butter, melted
1/2 cup milk
1 teaspoon baking powder
1/2 teaspoon salt
2 1/2 cups all-purpose flour
3 cups mixed berries
For the Streusel Topping:
4 tablespoons (1/4 cup) cold butter, chopped
1/3 cup granulated sugar
1 cup all-purpose flour
Instructions
- Step 1: Preheat oven to 350°F and grease a 9×13-inch baking pan with butter or nonstick spray.
- Step 2: In a large mixing bowl, beat together the eggs, 1 cup of granulated sugar, and vanilla extract until light and frothy, about 3 to 5 minutes.
- Step 3: Mix in the melted butter and milk until just combined.
- Step 4: In a separate bowl, whisk together 2 1/2 cups of all-purpose flour, the baking powder, and salt. Gradually stir this into the wet ingredients until just combined.
- Step 5: Pour the batter into the prepared pan. Sprinkle the mixed berries evenly over the batter.
- Step 6: To make the topping, add the cold butter, 1/3 cup of granulated sugar, and 1 cup of all-purpose flour to a small bowl. Using your fingers, incorporate the butter until the mixture is crumbly.
- Step 7: Sprinkle the streusel topping over the berries.
- Step 8: Bake for about 40 minutes, or until a toothpick inserted into the center comes out clean.
- Step 9: Let the cake cool in the pan for 10 minutes before slicing and serving.
Notes
If using strawberries, be sure to chop or slice them first.
Using room temperature eggs helps create a lighter cake texture.
Serve warm, sliced directly from the pan.
