Easy Bakery-Style Orange Muffins with Zesty Glaze

Description

A recipe for fluffy, bakery-style orange muffins with a bright citrus flavor, finished with a simple orange glaze.


Ingredients

For the Muffins:
3 cups (360g) all purpose flour
1 ½ cups (297g) granulated sugar
3 tsp baking powder
½ tsp baking soda
½ tsp salt
2 large eggs
¾ cup (170g) buttermilk
½ cup (100g) vegetable oil
zest of 3 oranges (35 Tbsp)
¼ cup (56g) fresh squeezed orange juice
Sanding sugar, for topping (optional)
For the Orange Glaze:
1 ⅓ cup (151g) powdered sugar
3 Tbsp fresh squeezed orange juice


Instructions

  1. Step 1: In a mixing bowl, stir together the flour, granulated sugar, baking powder, baking soda, and salt. Set aside.
  2. Step 2: In a larger bowl, combine the eggs, buttermilk, vegetable oil, orange zest, and ¼ cup of fresh squeezed orange juice. Stir to combine.
  3. Step 3: Gradually mix the dry ingredients into the wet ingredients by hand until just combined. The batter will be very thick.
  4. Step 4: Cover the bowl and let the batter rest for 15 minutes. While the batter rests, preheat the oven to 425°F.
  5. Step 5: Line a 12-count muffin pan by placing liners in every other well, for a total of 6 liners for the first batch.
  6. Step 6: Divide about half of the batter among the 6 prepared liners, filling them to the top. Top with sanding sugar, if desired.
  7. Step 7: Bake at 425°F for 7 minutes. Then, keeping the muffins in the oven, reduce the temperature to 350°F and continue to bake for 13-16 minutes, or until a toothpick inserted into the center comes out clean
  8. Step 8: Allow the first batch of muffins to cool in the pan. Repeat the baking process with the remaining batter, making sure to preheat the oven back to 425°F before starting the second batch.
  9. Step 9: To make the glaze, mix the powdered sugar and 3 Tbsp of fresh squeezed orange juice in a bowl until smooth.
  10. Step 10: Once the muffins are cool, dip the tops in the glaze or drizzle it over them.

Notes

The batter is intended to be very thick; do not overmix.

Resting the batter for 15 minutes is a crucial step for achieving a tender muffin texture.

Baking only 6 muffins at a time in a 12-count pan helps create tall, bakery-style domes.

For the glaze, you can add more orange juice a little at a time to reach your desired consistency.
