Ingredients
2 cups whole milk, divided
1/2 cup granulated sugar
1/4 cup cornstarch
2 large egg yolks, optional
1 teaspoon vanilla extract
1/4 teaspoon salt
10 to 12 digestive biscuits, graham crackers, or vanilla wafers
2 tablespoons unsalted butter, melted
1 tablespoon sugar, optional for crumbs
Instructions
- Step 1: In a medium saucepan, whisk 1/2 cup of milk with the cornstarch until the mixture is smooth. If using, whisk in the egg yolks.
- Step 2: Add the remaining 1 1/2 cups of milk, sugar, and salt to the saucepan.
- Step 3: Place the saucepan over medium heat and cook while whisking constantly until the custard thickens and becomes smooth and creamy.
- Step 4: Allow the custard to gently bubble for 1 to 2 minutes while continuing to whisk.
- Step 5: Remove the pan from the heat and stir in the vanilla extract.
- Step 6: Pour the finished custard into a serving dish or small dessert cups, then cover and chill for at least 30 minutes, or until set.
- Step 7: To make the topping, crush the biscuits into fine crumbs and mix them with the melted butter and optional sugar until the texture resembles wet sand.
- Step 8: Sprinkle the crumb topping over the chilled custard immediately before serving to ensure it stays crunchy.
Notes
Whisk the custard constantly while cooking to prevent any lumps from forming.
It is important to chill the custard completely before adding the crumbs.
Add the cookie topping right before serving so it remains crunchy.
For a sweeter flavor, you can use vanilla wafers for the crumb topping.
Consider adding sliced bananas or berries for a fruity version of the dessert.
Store the custard covered in the refrigerator for up to 3 days. Keep the crumb topping in a separate container at room temperature.
