- 4 medium sweet potatoes
- 2 apples, peeled and chopped
- 2 tablespoons butter
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon nutmeg
- 2 tablespoons brown sugar or maple syrup
- 1/2 cup cranberries (fresh or dried)
- 1/2 teaspoon vanilla extract
- 4 tablespoons whipped cream cheese or goat cheese
- Chopped nuts and fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F. Roast the sweet potatoes for 45–50 minutes until they are fork-tender.
- While the potatoes roast, melt the butter in a skillet over medium heat. Add the chopped apples, cinnamon, nutmeg, and brown sugar. Cook until the apples become soft.
- Stir the cranberries into the apple mixture. Cook until fresh cranberries burst or dried cranberries plump up. Remove the skillet from the heat and stir in the vanilla extract.
- Once the sweet potatoes are cooked, slice them open lengthwise. Gently fluff the inside flesh with a fork.
- Add a tablespoon of whipped cheese into each potato. Top them with the warm apple and cranberry mixture.
- Garnish with chopped nuts or fresh parsley if you wish, and serve warm.

- You can use either brown sugar or maple syrup for sweetness.
- Both fresh and dried cranberries work well in this recipe.
- Goat cheese offers a tangier flavor compared to cream cheese.
