  • 4 medium sweet potatoes
  • 2 apples, peeled and chopped
  • 2 tablespoons butter
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon nutmeg
  • 2 tablespoons brown sugar or maple syrup
  • 1/2 cup cranberries (fresh or dried)
  • 1/2 teaspoon vanilla extract
  • 4 tablespoons whipped cream cheese or goat cheese
  • Chopped nuts and fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F. Roast the sweet potatoes for 45–50 minutes until they are fork-tender.
  2. While the potatoes roast, melt the butter in a skillet over medium heat. Add the chopped apples, cinnamon, nutmeg, and brown sugar. Cook until the apples become soft.
  3. Stir the cranberries into the apple mixture. Cook until fresh cranberries burst or dried cranberries plump up. Remove the skillet from the heat and stir in the vanilla extract.
  4. Once the sweet potatoes are cooked, slice them open lengthwise. Gently fluff the inside flesh with a fork.
  5. Add a tablespoon of whipped cheese into each potato. Top them with the warm apple and cranberry mixture.
  6. Garnish with chopped nuts or fresh parsley if you wish, and serve warm.
