Classic Cherry Delight is an easy no-bake dessert made with a buttery graham crust, creamy vanilla filling, and cherry pie topping. Quick, delicious, and perfect for sharing!
Ingredients
Crust:
7 tbsp unsalted butter, melted
1 1/2 cups graham cracker crumbs (about 9 whole crackers)
3 tbsp granulated sugar
Filling:
8 oz cream cheese, softened
1 cup powdered sugar
1 tsp pure vanilla extract
8 oz Cool Whip, thawed
1 can (21 oz) cherry pie filling
Instructions
Step 1: Prepare the Crust
In a medium bowl, microwave the butter until fully melted, about 30 seconds. Combine with graham cracker crumbs and sugar, stirring until the texture resembles wet sand. Firmly press the mixture into the base of a greased 8×8-inch baking dish. Set aside.
Step 2: Make the Creamy Filling
Using a mixer, beat the cream cheese (brought to room temperature) until it’s smooth and free of lumps. Add in the powdered sugar and vanilla extract, mixing thoroughly. Carefully fold in the Cool Whip until the filling is fluffy and consistent, without overmixing.
Step 3: Assemble the Layers
Spread the cream cheese mixture evenly over the crust. Spoon the cherry pie filling over the top, spreading it gently to cover the entire surface.
Step 4: Chill
Let the dessert chill in the refrigerator for a minimum of 2 hours, or preferably overnight, so the layers can firm up and flavors develop.
Notes
Bring cream cheese to room temperature for a smooth filling.
Garnish with whipped cream or chocolate shavings if desired.
