A decadent dessert featuring a rich chocolate cake that bakes over a layer of pecans and caramel, creating its own warm, fudgy pudding sauce underneath.
Ingredients
1 cup flour
2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup sugar
3 tablespoons cocoa powder
2 tablespoons butter (melted)
1/2 cup milk
1/2 cup chopped pecans
1/4 cup sugar
1/3 cup brown sugar
1 tablespoon cocoa powder
3/4 cup boiling water
1/2 cup jarred caramel sauce (divided)
Instructions
- Step 1: Preheat the oven to 350°F and grease a 1.5 qt casserole dish.
- Step 2: In a mixing bowl, whisk together the flour, baking powder, salt, 2/3 cup sugar, and 3 tablespoons of cocoa powder.
- Step 3: Stir in the melted butter, milk, and pecans, then spread the batter evenly into the prepared casserole dish.
- Step 4: In another bowl, combine the 1/4 cup sugar, brown sugar, and 1 tablespoon of cocoa powder. Sprinkle this mixture over the batter.
- Step 5: Stir 1/4 cup of the caramel sauce into the boiling water and pour it over the topping. Do not stir.
- Step 6: Bake for 30 minutes or until the top of the cobbler is almost set. The cake will rise, and a fudgy pudding will form underneath.
- Step 7: Drizzle the remaining caramel sauce on top and sprinkle with additional pecans, if desired.
- Step 8: Serve warm with ice cream or whipped topping.
Notes
It is important not to stir after pouring the hot water mixture over the batter; this creates the separate sauce layer.
The cobbler center will still be a little jiggly when done, as the bottom sauce layer will be runny.
Serve warm for the best texture.
