Description
Chocolate Mocha Swiss Rolls are light chocolate sponge rolls filled with smooth mocha ganache and sliced into neat portions.
Ingredients

- 4 large eggs
- 1/2 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/4 cup cocoa powder
- 2 tbsp corn starch
- 1/8 tsp baking soda
- 1 1/2 cups extra bitter chocolate
- 1 cup whole milk
- 1 tbsp instant coffee
Instructions
- Preheat the oven to 350°F (175°C).
- Sift together the flour, cocoa powder, corn starch, and baking soda.
- Warm the eggs in a bain-marie over simmering water.
- Add the sugar in a slow stream while you beat the eggs.
- Whisk by hand until the mixture feels warm.
- Move the mixture to an electric mixer bowl and whisk on high speed until it turns light, fluffy, and ribbon-like.
- Gently fold in the dry ingredients with a rubber spatula.
- Spread the batter evenly on a parchment-lined baking tray with an offset spatula.
- Bake for about 20 minutes.
- Cool the sponge on a rack, then cover it with a clean kitchen towel to keep it moist.
- Melt the chocolate in a bain-marie.
- Bring the milk to a boil in a small saucepan.
- Remove it from the heat, whisk in the instant coffee, and let it infuse for 3 minutes.
- Pour the milk over the melted chocolate and stir gently until smooth.
- Remove the ganache from the bain-marie and let it cool for 1 hour.
- Whisk the mocha ganache to a soft consistency.
- Place the sponge on a flat work surface.
- Spread the ganache evenly over the sponge.
- Roll the sponge tightly from one end while you remove the parchment paper.
- Place the roll on a baking tray and freeze it for 30 minutes.
- Move the roll to a cutting board and slice it into 1-inch to 1 1/4-inch portions.
- Place the slices on a platter and dust them with icing sugar.
Notes
- You can add drained brandied cherries before rolling the sponge.
- Use a clean kitchen towel to keep the sponge soft while it cools.
- Slice the roll with a sharp knife for clean pieces.
