Description
Chocolate Chip Cookie Pie is a rich, gooey dessert that combines a classic chocolate chip cookie with a buttery pie crust. Baked from scratch, this cookie pie has crisp edges, a soft center, and plenty of melty chocolate, making it perfect for gatherings or an easy homemade treat.
Ingredients
1 9 inch all butter pie crust, homemade or store bought
½ cup unsalted butter, melted
⅓ cup granulated sugar
½ cup packed brown sugar
1 large egg
1 teaspoon vanilla extract
½ teaspoon baking soda
½ teaspoon salt
1 ½ cups all purpose flour
1 ½ cups chocolate chips, plus extra for topping
Instructions
-
Preheat Your Oven: Start by preheating the oven to 425°F (220°C). Position the rack in the center.
-
Prepare the Pie Crust: Press your pie crust into a 9-inch pie plate. Crimp the edges if you like. Chill in the fridge until you’re ready to add the filling.
-
Mix Butter and Sugars: In a large mixing bowl, combine the melted butter, granulated sugar, and brown sugar. Stir with a wooden spoon or use a hand mixer until smooth.
-
Add Wet Ingredients: Beat in the egg, vanilla extract, baking soda, and salt. Stir until everything is well combined.
-
Incorporate Flour: Add the all-purpose flour and mix just until no dry streaks remain and the dough is thick.
-
Add Chocolate Chips: Fold in the chocolate chips evenly throughout the dough.
-
Assemble the Pie: Spread the dough into the prepared crust and smooth out the top. Sprinkle a few extra chocolate chips on top for that bakery-style finish.
-
Bake in Stages: Cover the pie crust edges with a pie shield or foil. Bake at 425°F for 10 minutes. Then reduce the temperature to 350°F and bake for another 25 minutes, or until the top is golden and no longer glossy.
-
Cool Before Serving: Let the pie cool to room temperature before slicing. It will be soft and gooey when warm but sets beautifully as it cools.
Notes
This pie slices best once fully cooled but tastes great warm or at room temperature.
Use a pie shield or foil to prevent the crust from browning too quickly.
For cleaner slices, chill the pie for 30 minutes before cutting.
