Description
Cherry Clafoutis is a classic French dessert made with juicy cherries baked in a creamy, custard-like batter. Simple, elegant, and perfect for any occasion.
Ingredients
1 ½ cups fresh sweet cherries, pitted (or 1 can canned cherries, drained)
3 large eggs, room temperature
½ cup all-purpose flour
½ cup granulated sugar, plus 2 tablespoons for topping
1 cup whole milk (or half and half)
1 ½ teaspoons vanilla extract
½ teaspoon almond extract
¼ teaspoon salt
Powdered sugar, for dusting
Instructions
- Prepare the Dish – Preheat the oven to 350°F (175°C) and generously butter a 9- or 10-inch baking dish or pie plate.
- Add the Cherries – Spread the pitted cherries evenly across the bottom of the prepared dish.
- Blend the Batter – In a blender, combine eggs, sugar (reserve 2 tablespoons for topping), milk, flour, vanilla, almond extract, and salt. Blend until smooth.
- Pour and Sprinkle – Pour the blended batter over the cherries, then sprinkle the reserved 2 tablespoons of sugar on top.
- Bake – Place in the oven and bake for 35–45 minutes, or until the custard is set and lightly golden on top.
- Cool and Serve – Allow to cool for at least 15 minutes. Dust with powdered sugar before serving. Enjoy warm, at room temperature, or chilled.
Notes
Use fresh, canned, or thawed frozen cherries. Ensure canned or frozen cherries are well-drained.
Traditionally made with unpitted cherries, but pitted cherries make for easier eating.
Store leftovers in an airtight container in the fridge for up to 4 days.
