2 cups cooked mashed potatoes
3 large eggs, beaten
1 cup grated cheese, such as Parmesan or Gruyère, divided
1/4 cup minced fresh chives
1/4 cup diced cooked beef bacon (optional)
Kosher salt

Sour cream, for serving (optional)
Instructions
- Step 1: Arrange a rack in the middle of the oven and preheat to 400°F. Lightly coat the cups of a mini-muffin tin with cooking spray or butter.
- Step 2: In a large bowl, combine the 2 cups of cooked mashed potatoes, 3 beaten large eggs, 3/4 cup of the grated cheese, 1/4 cup of minced fresh chives, and the optional 1/4 cup of diced beef bacon.
- Step 3: Stir the mixture until well combined. Season with kosher salt and black pepper to taste, adjusting based on how seasoned your original mashed potatoes are.
- Step 4: Fill each cup of the prepared muffin tin with the mashed potato mixture.
- Step 5: Sprinkle the tops of the puffs with the remaining 1/4 cup of cheese.
- Step 6: Bake for about 20 minutes, or until the potato puffs are set, heated through, and browned on top.
- Step 7: Let the puffs cool in the pan for about 5 minutes, then use a spoon or knife to gently release them.
- Step 8: Serve immediately, with dollops of sour cream if desired.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
