For the Carrot Cake Bars:
1/2 cup butter (melted)
1 cup light brown sugar (packed)
1 large egg
1 tablespoon vanilla extract
1 cup all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup shredded carrots
For the Cheesecake Swirl:
4 ounces cream cheese (room temperature)
1/4 cup granulated sugar
1 large egg yolk
3/4 teaspoon vanilla extract


Instructions

  1. Step 1: Preheat the oven to 350 degrees F. Spray an 8×8 baking pan with non-stick spray or line it with parchment paper and lightly spray.
  2. Step 2: In a medium bowl, mix the melted butter and light brown sugar until combined.
  3. Step 3: Stir in the large egg and 1 tablespoon of vanilla extract.
  4. Step 4: Add the all-purpose flour, ground cinnamon, baking powder, and salt. Stir until completely combined.
  5. Step 5: Fold in the shredded carrots and set the carrot cake batter aside.
  6. Step 6: In a separate medium bowl, beat the cream cheese and granulated sugar with a hand mixer until smooth.
  7. Step 7: Add the large egg yolk and 3/4 teaspoon of vanilla extract to the cream cheese mixture. Beat until smooth and creamy.
  8. Step 8: Spread about half of the carrot cake batter into the prepared pan.
  9. Step 9: Drop dollops of half the cheesecake batter over the carrot cake batter.
  10. Step 10: Add the remaining carrot cake batter on top of and around the cheesecake dollops.
  11. Step 11: Add the remaining cheesecake batter by dropping dollops on top.
  12. Step 12: Use a knife or skewer to swirl the batters together as much or as little as you like.
  13. Step 13: Bake for 35-40 minutes until the edges are golden brown and the center has very little jiggle.
  14. Step 14: Let the bars cool completely before cutting and serving.

Notes

Cool completely before cutting for clean slices.

Store leftovers in an airtight container in the refrigerator.
