Ingredients

6 tbsp unsalted butter

6 oz dark chocolate, chopped

½ cup granulated white sugar

½ cup packed light brown sugar

2 large eggs

½ tsp vanilla extract

⅛ tsp coffee extract (optional)

¾ cup all-purpose flour

¼ cup dark unsweetened cocoa powder

½ tsp baking powder

¼ tsp salt


Instructions

  1. Place the chopped dark chocolate and butter in a microwave-safe bowl. Microwave in 20‑second bursts, stirring in between, until melted and smooth. Let cool slightly.
  2. In a large bowl, whisk together both sugars, eggs, vanilla extract, and optional coffee extract. Beat the mixture on medium speed using a hand mixer for 5 minutes, until it’s pale and fluffy.
  3. Slowly fold in the cooled chocolate and butter mixture until fully incorporated.
  4. In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt.
  5. Fold the dry ingredients into the wet mixture—expect a loose, brownie‑like dough.
  6. Cover and refrigerate the dough for about 20 minutes, until firm enough to scoop and shape.
  7. Preheat oven to 350°F (175°C). Line your baking tray with parchment paper or a silicone baking mat.
  8. Using a 2‑tablespoon cookie scoop (or your hands), roll dough into balls and place them about 2 inches apart on the baking sheet.
  9. Bake for 14–16 minutes—edges will be set and centers slightly soft.
  10. Let the cookies rest on the pan for 2–3 minutes before transferring to a wire rack to cool completely.

Notes

Chilling the dough ensures thick, chewy cookies.

Coffee extract enhances the chocolate flavor but can be omitted.

Store in an airtight container for up to 5 days.

Freeze dough balls and bake as needed.
