A quick and easy recipe for vegetarian black bean burritos, filled with fresh pico de gallo, avocado, and cheese. Perfect for a satisfying lunch or dinner.

2 large tortilla wraps
1 cup Mexican black beans
1 cup white rice OR 1 cup Mexican spicy rice
50g cheddar cheese, grated
1 tomato
1/2 red onion
1 lime
1 medium avocado
Salt
1/4 cup cilantro, diced
2 tablespoon pickled red onions
2 tablespoon hot sauce
Instructions
- Step 1: Cook your rice and the Mexican black beans according to their respective recipe or package instructions.
- Step 2: While the rice and beans cook, prepare the pico de gallo. Dice the onion and tomato, then mix in a bowl with the diced cilantro, a sprinkle of salt, and the juice from half a lime.
- Step 3: Cut the avocado and either smash or slice it. Squeeze the remaining lime juice over the avocado to prevent browning.
- Step 4: When all components are ready, warm the tortilla wraps in the microwave for approximately 15 seconds.
- Step 5: Assemble the burritos by placing the rice, black beans, pickled red onions, pico de gallo, and avocado in a line down the middle of each wrap.
- Step 6: Fold in the ends of the wrap, then roll the burrito tightly.
- Step 7: For best results, wrap the finished burrito in foil to keep it secure. Cut in half and serve immediately.
Notes
The pickled red onions are an optional ingredient.
Wrapping the burrito in foil helps keep it warm and holds everything together while eating.
You can use either plain white rice or a pre-seasoned Mexican spicy rice for more flavor.
