A simple recipe for homemade banana walnut brittle, a crunchy and sweet candy treat.
Ingredients

1 cup Granulated Sugar
1/2 cup Light Corn Syrup
1/4 tsp Salt
1/4 cup Water
1 tsp Baking Soda
2 Tbsp Butter
3/4 cup Chopped Walnuts
3/4 cup Dried Banana Chips
1 tsp Vanilla Extract

Instructions
- Step 1: Set your oven to its lowest temperature or ‘warm’ setting. Spray a large cookie sheet with cooking spray and place it in the oven to keep warm.
- Step 2: In a heavy 2-quart saucepan, mix together the sugar, corn syrup, salt, and water.
- Step 3: Bring the mixture to a boil over medium-high heat. Attach a candy thermometer and cook, stirring often, until the temperature reaches 300 degrees F (150 C).
- Step 4: At 300 degrees F, remove the pan from the heat. Immediately stir in the baking soda and butter until incorporated.
- Step 5: Quickly add the walnuts, banana chips, and vanilla extract, stirring until everything is completely coated.
- Step 6: Pour the brittle mixture onto the warm cookie sheet. Use two buttered forks to pull and spread the brittle into a thin, even layer.
- Step 7: Let the brittle cool completely, then break it into pieces to serve.
Notes
Keep a very close eye on the candy after it reaches 280 degrees F, as the temperature can rise very quickly at that point to prevent burning.
Using a heavy-bottomed saucepan helps distribute heat evenly and prevents the sugar from scorching.
Buttering two forks will help you spread the hot brittle mixture without it sticking.
