Ingredients
2 pounds pork sausage
12 large eggs
1 cup sour cream (light or regular)
¼ cup milk
1 teaspoon kosher salt
½ teaspoon ground black pepper
4 green onions, chopped
½ green bell pepper, diced
½ red bell pepper, diced
2 cups shredded cheddar cheese
Instructions
- Preheat the oven: Set your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish with cooking spray.
- Prepare the egg mixture: In a large mixing bowl, whisk together the eggs, sour cream, milk, salt, pepper, and cheese until well combined.
- Cook the sausage: In a large skillet over medium heat, cook the pork sausage until browned, breaking it up with a wooden spoon. Drain most of the grease and add the sausage to the egg mixture.
- Sauté the veggies: Using the same skillet, sauté the bell peppers and green onions for 2–3 minutes until softened. Add them to the egg and sausage mixture.
- Combine and bake: Pour the mixture into the prepared baking dish, spreading it evenly. Bake for 35–50 minutes, until the edges are firm and the center has a gentle jiggle.
- Cool and serve: Allow the casserole to rest for several minutes before slicing
