16.25 ounces white cake mix
1¼ cups water
½ cup vegetable oil
4 large egg whites, room temperature
Coffee Drizzle
½ cup hot water
2 tablespoons granulated sugar
1 tablespoon espresso powder
2 tablespoons coffee flavored liqueur such as Kahlua, optional
Mascarpone Cheese Frosting
16 ounces mascarpone cheese, cold
4 cups cold heavy cream
1 teaspoon pure vanilla extract
¾ cup granulated sugar
1 tablespoon unsweetened cocoa powder
Whole coffee beans for garnish
Instructions
- Preheat oven to 350 degrees Fahrenheit. Lightly spray two 9 inch round cake pans with baking spray.
- In a medium bowl, combine cake mix, water, oil, and egg whites. Mix on medium speed until smooth.
- Divide batter evenly between pans and bake for 22 to 25 minutes, or until a toothpick inserted comes out clean. Cool completely.
- Stir together hot water, sugar, espresso powder, and optional coffee liqueur. Set aside to cool.
- In a small bowl, stir mascarpone until smooth.
- In a large bowl, whip cold heavy cream and vanilla until stiff peaks form. Gradually add sugar and continue beating until incorporated.
- Gently mix mascarpone into whipped cream in portions until smooth and stable.
- Slice each cooled cake into two layers, creating four layers total.
- Place one layer on a serving plate. Brush generously with coffee mixture and spread 1 to 1¼ cups frosting on top. Repeat with remaining layers.
- Frost the top and sides of the cake with remaining mascarpone frosting.
- Dust with cocoa powder and pipe decorative swirls. Garnish each swirl with a coffee bean.
- Chill for at least 1 hour before slicing and serving.
