Ingredients
12 to 16 oz cheese tortellini
1 lb lean ground beef
1 tbsp taco seasoning
1 cup beef broth
2 cups enchilada sauce
1 (15 oz) can black beans, drained and rinsed
1 (15 oz) can corn kernels, drained
1 cup shredded cheddar cheese
Sour cream, for garnish
Green onions, thinly sliced, for garnish
Fresh cilantro leaves, roughly chopped, for garnish
Instructions
- Cook the Tortellini: Prepare the tortellini according to package directions until al dente. Drain thoroughly and set aside.
- Brown the Beef: In a large oven-safe skillet over medium heat, cook the ground beef, breaking it up as it browns. Once fully cooked, drain any excess grease.
- Season the Beef: Sprinkle taco seasoning over the beef, then stir in beef broth and enchilada sauce until fully combined.
- Add Veggies and Pasta: Stir in black beans, corn, and cooked tortellini until everything is well mixed.
- Simmer: Let the mixture simmer for 1 to 2 minutes until heated through and slightly thickened.
- Add Cheese: Sprinkle shredded cheddar cheese evenly over the top of the skillet.
- Broil: Transfer the skillet to the oven and broil on high for 1 to 2 minutes, just until the cheese melts.
- Garnish and Serve: Remove from oven and top with sour cream, green onions, and cilantro. Serve hot and enjoy!
