Description

Taco Tortellini Skillet blends Tex Mex flavors and cheesy tortellini in one easy, family-approved skillet dinner. Ready in 25 minutes with ground beef, beans, corn, and enchilada sauce, it’s the ultimate fusion of comfort and flavor.

Ingredients

Scale

12 to 16 oz cheese tortellini

1 lb lean ground beef

1 tbsp taco seasoning

1 cup beef broth

2 cups enchilada sauce

1 (15 oz) can black beans, drained and rinsed

1 (15 oz) can corn kernels, drained

1 cup shredded cheddar cheese

Sour cream, for garnish

Green onions, thinly sliced, for garnish

Fresh cilantro leaves, roughly chopped, for garnish

Instructions

  • Cook the Tortellini: Prepare the tortellini according to package directions until al dente. Drain thoroughly and set aside.
  • Brown the Beef: In a large oven-safe skillet over medium heat, cook the ground beef, breaking it up as it browns. Once fully cooked, drain any excess grease.
  • Season the Beef: Sprinkle taco seasoning over the beef, then stir in beef broth and enchilada sauce until fully combined.
  • Add Veggies and Pasta: Stir in black beans, corn, and cooked tortellini until everything is well mixed.
  • Simmer: Let the mixture simmer for 1 to 2 minutes until heated through and slightly thickened.
  • Add Cheese: Sprinkle shredded cheddar cheese evenly over the top of the skillet.
  • Broil: Transfer the skillet to the oven and broil on high for 1 to 2 minutes, just until the cheese melts.
  • Garnish and Serve: Remove from oven and top with sour cream, green onions, and cilantro. Serve hot and enjoy!

Notes

Use refrigerated tortellini for the best texture and quick prep.

Watch the broiler carefully—cheese melts fast!

Swap ground beef for ground turkey or veggie crumbles for variation.

Make it creamier with a tablespoon or two of cream cheese stirred in.
