Ingredients
12 oz jumbo pasta shells
1 lb lean ground beef (90%)
1 medium onion, chopped
1 medium green bell pepper, diced
2 garlic cloves, minced
1 can (14.5 oz) diced tomatoes with juice
1 packet (1.25 oz) taco seasoning
1/4 cup water
1 cup salsa, divided
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
Optional Toppings: shredded lettuce, diced tomato, red onion, sour cream, extra salsa
Instructions
- Cook the Pasta: Start by boiling the jumbo pasta shells according to the package instructions until al dente. Drain and set aside.
- Preheat the Oven: Heat your oven to 375°F and lightly grease a 9×13-inch casserole dish with nonstick spray.
- Prepare the Meat Filling: In a large skillet over medium-high heat, cook the ground beef, chopped onion, diced green pepper, and minced garlic. Stir occasionally, breaking up the beef, until the meat is fully browned (about 5 minutes).
- Add Flavor: Stir in the diced tomatoes with their juices, taco seasoning, and water. Let the mixture simmer uncovered for about 10 minutes, stirring occasionally, until it thickens. Remove from heat and let it cool slightly.
- Assemble the Dish: Spread half of the salsa on the bottom of your prepared casserole dish. Spoon the taco meat mixture into each pasta shell and arrange them in the dish.
- Top with Cheese and Bake: Spoon the remaining salsa over the shells, then sprinkle the shredded cheddar and Monterey Jack cheese evenly on top. Cover with foil and bake for 20 minutes, until heated through and cheese is melted. For a golden top, remove the foil and broil for 2-3 minutes.
- Serve and Enjoy: Serve warm with your favorite toppings for that classic taco finish!
