1 package (3 oz) cook-and-serve vanilla pudding mix

1¼ cups water

2 cups sliced peaches (fresh, canned, or thawed frozen)


Instructions

  1. Prepare the Crust:
    • Mix graham cracker crumbs with sugar in a bowl.
    • Stir in melted butter until evenly combined.
    • Firmly press the crust mixture into the bottom and along the edges of a 9-inch pie dish.
    • Place in a 375°F oven and bake for 6 to 8 minutes, or until the crust turns a light golden brown. Cool completely.
  2. Make the Filling:
    • Beat the softened cream cheese until smooth.
    • Add powdered sugar and mix until fully incorporated.
    • Fold in the whipped topping gently until the mixture is fluffy.
    • Evenly layer the creamy filling over the cooled crust, then chill in the refrigerator.
  3. Prepare the Topping:
    • In a saucepan, combine peach gelatin and vanilla pudding mix.
    • Stir in water and cook over medium-low heat, stirring constantly, until it comes to a boil.
    • Remove from heat and let cool for 5 minutes.
  4. Assemble the Pie:
    • Arrange peach slices over the chilled cream layer.
